Larger size alone does make the Bong more effective than a Bubbler because the smoke has a longer time to cool further AND when you pull the bowl to clear a Bong, you get a larger charge of cooled smoke. Size also affords the maker an opportunity to add functional gear to a Bong (percolators and ice pinches are most common) which is much harder to do in a space constrained design typical of Bubblers.

A hookah is a more traditional and communal method of smoking. They have been around for thousands of years. Redesigned for more modern application, Bongs are most commonly used for cannabis nowadays but can be used with other smokable herbs. Bongs are also a little more flashy and carry a bit more cache and status because of the size.
